Plant Characteristics
Onions (Allium cepa), like garlic, are a member of the lily family. There are several varieties of onions (eg. white globe, yellow globe, red globe, and green). Onions differ in their size, color, and taste. There are two main types of large globe-shaped onions: spring/summer and storage onions. Spring/summer onions have a characteristically mild or sweet taste. Storage onions are are dried out (or cured) to attain dry, crisp skins before put into long-term storage. Storage onions generally have a more pungent flavor and are usually named by their color: white, yellow, or red. Smaller onions also come in many types, such as the green onion, or scallion, which includes chives, leeks, and shallots; and the pearl onion.
